Recipe of the Month: Gluten-Free Veggie Quiche
Picture this: it’s another crazy weekday morning. After snoozing your alarm three times, you roll out of bed and embark on yet another attempt to make yourself look semi-presentable , even though you are absolutely exhausted and are already thinking about the next time you can sleep. You go through your normal routine: take the dog out, get the kids ready, check your email, and so on. Before you know it, it’s about time to go. Then it hits you: you didn’t eat breakfast! But there’s no time… there’s never time. So you just skip it all together or you opt for the grease concoction at the nearest drive-thru.
You deserve better than this! As a hard working human being, you deserve a healthy and balanced meal to get your busy day started off on a good foot. This is where Gluten-Free Veggie Quiche comes into play.
This recipe couldn’t be easier!
Don’t worry, I’m not trying to say that you have time to cook up a recipe on a weekday… I’m not that naive. The beautiful thing about Gluten-Free Veggie Quiche is that it can be made in just a few minutes on the weekend with next-to-no-effort! Don’t believe me?! Keep reading.
Directions:
1. Preheat oven to 350 degrees.
2. Sautee veggies of choice in a non-stick pan with a little olive oil spray until soft. The veggies we used are pictured below.
3. Add sauteed veggies to a thawed out gluten-free pie shell (can be found at Whole Foods and other supermarkets).
4. Top with 8 whisked eggs and bake at 350 degrees for 30 minutes.
See what I mean?! Super easy.

Like I said earlier, Gluten-Free Veggie Quiche can be made on the weekend and munched on throughout the week. It makes 4 servings (feel free to make 2 or more if you have multiple mouths to feed!) and can be stored in the fridge for 5 days!
Just pop a slice of this deliciousness in the microwave for one minute and BAM! Breakfast is served.
