I saw this picture the other day and it cracked me up. While this picture undoubtedly applies to moms, I think it can apply to everyone.

In January, I was cooking oven roasted chicken thighs with a light mushroom cream sauce and a side of cauliflower rice. But it’s May now and that’s not happening.
The other night, I took a can opener to a pack of tuna and plopped it on top of some kale. I added some store-bought balsamic vinaigrette and literally had a bowl of Honey Nut Cheerios on the side for some carbs. I admit it, this crazy-busy year has burned me out. The last thing I (and I’m sure all of you) want to do after another long day of work is cook an extensive meal.
Hang in there everyone! The busiest time of the year is almost over! Summer is right around the corner! And, in the meantime, I have an incredible recipe to share with you today that is both quick and easy to make… and absolutely delicious!
My household has never been one to sit still. At one point, between my brother, sister, and, we were playing seven sports, three instruments, and attending two different schools. Both my parents had full-time jobs and a household to maintain. Through that time, my mom cooked for us every weeknight all while exercising, taking us to and from practice, working, and (somehow) sleeping. She is truly a Wonder Woman and, in honor of Mother’s Day, she is pictured with six-year-old Hannah below xoxo.

Recipe: Roasted Kielbasa & Vegetables
Let me just tell you one thing, during that hectic time in my household, this recipe made it to the table quite a bit. Besides being tasty, quick, AND easy, its high amount of vegetables makes it extremely good for you and, honestly, very pretty to look at. And the best part? It’s a one-pan-wonder, meaning hardly any dishes!!
To make it even healthier, my mom and I swap out the pork kielbasa sausage and use the chicken kielbasa version in its place.
